After seeing your post, I went to the site to see what
Wolfgang was up to now. I had read a
little about his life and how he came from Austria, by way of France, where he
went to the best cooking school, worked hard, and then came to America to
pursue his dreams. He has such
imagination and is not afraid to experiment with foods from many cultures. On your site I saw his most recent recipe for
Three-Cheese Quesadillas, and a little story about how this is a take off on a
Mexican recipe. He told the reader that
the definition of the word quesadillas, meant “little cheesy thing”. I love this stuff. He said that this was the first Mexican food
that his sons had tried and liked. Then
he spoke about all the ways you could make the quesadillas, fried in olive oil,
to get a million different tastes. His
three cheese choice was Fontina, Mozzerella and Queso Blanco- Mexican style
cheese. He also said that you could add
sea food, chicken or just about anything else to this simple and delicious
dish.
